One popular story credits the invention to a Danish sea captain named Hanson Gregory. During a particularly violent storm, Captain Gregory needed both hands free to hold the wheel of his ship, so he stabbed a fried cake upon a spoke of the wheel. The resulting fried cake with the hole in the center became known as a “doughnut” or “donut.” Whether the story of Captain Gregory is true or not, adding a hole to the center of the fried cake was a great innovation. The center hole creates more surface area and the donut cooks faster.
